Pumpkin Chili

I have to say this was some of the best chili I have ever tasted. I was a little skeptical about using pumpkin in a chili recipe but my mind was changed after tasting this. Ingredients 1 can pumpkin, not spiced for pie 1 can hominy, rinsed and drained 1 can red kidney beans, rinsed and drained 1 can Rotel diced tomatoes and chilies 2 tbsp chili powder 1 tsp curry powder 1 medium onion, minced 2 cloves garlic, minced 2 cups chicken broth salt and black pepper to taste.

Roger Eden: Hi Tom,made this chili today. Have to say it was great,changed a couple things. added the meat of one chicken breast and a teaspoon of chipotle powder. I did the math and it only had 150 cal per cup,going to make this again. Thanks for the recipe.

Vicky Shaw: I just got so excited watching this and all the possibilities running through my head. LOL! I know what you mean about offending anyone, but some of my friends who are vegan would love this recipe. Me I'm moving towards more of a vegetarian who still uses dairy. It's driving my family nuts I think with all the vegetarian meals lately. I think the boys will love this chili though. Big thumbs up!

The Root Boy Cooks !: I love this time of year. It doesn't really get cool until the end of November here but the promise of cooler weather is in the air The problem I have is there is pumpkin in everything, pumpkin spice latte,pumpkin spice this and pumpkin spice that. Now its in the chili.Thumbs Up anyway but I need MEAT in my chili.
